Jo and Matt will reveal their favourite ways to enjoy Neufchatel cheese with recommended wine pairings while sharing their wealth of knowledge on the best things to do in the Yarra Valley for a weekend away, longer stay, or even a day trip from Melbourne.

Neufchâtel Cheese – what you will need

Equipment

Large pot
Thermometer
Clean tea towel or cheese cloth
Strainer
Bowl
Ladle

Ingredients

4 litres unhomogenised milk
250g cream
1.2ml rennet (calf or vegetarian)
flora danica culture or kefir

The drained curds
The drained curds

Method

1. Bring milk to heat, add rennet and culture. Let sit.

2. Scoop curds and drain.

3. Tip the drained curds into a bowl and season with salt. Hang.

4. Shape the cheese as you wish. You can coat in herbs and spices to add some extra flavour.

5. Pair your cheese with bread crisps and wine!
